Let's talk seasoning

I can’t think of anything else to talk about, so let’s talk seasoning.

The earliest memory of seasoning meat was when I saw my parents seasoning chicken quarters that they would oven roast. They would use Lawry’s Seasoning and other basic seasonings including garlic powder, onion powder, salt, and pepper.

I probably forgot something but that is how I remember it. I remember them using a base of Lawry’s for almost every protein that we ate. When I went to college, I wanted to try something different, so I invested what little money I had in frozen pizzas, chicken breasts, a George Foreman grill, and various Mrs. Dash Seasonings.

Mrs. Dash was good but I found that I needed to add more salt to things than usual. After burning out of Mrs. Dash, I went through a phase of seasoning foods with a basic seasoning of salt, pepper, onion powder, and garlic powder. I made the mistake of making a salmon dish with whole peppercorns. I felt bad for the fish and worse for those that ate that fish.

Fast forward to several years ago. I was a newlywed and wanted to surprise my wife with my favorite cedar-plank salmon recipe that I had learned from a couple in the Kansas City area. I won’t say what is in it, but that recipe changed what I thought about food.

Since then I have been grilling and smoking a majority of the meals that I prepare at home. I still use various premade seasonings. Some of my favorites include Weber Seasonings, garlic salt, Kingsford Lemon Pepper, and Spade L Ranch Beef Marinade.

One of my favorite seasonings is Tajin. It’s a chili-lime seasoning you put on fruit and veggies. I love it on Avocado.

Why am I talking about seasoning today? Mainly to avoid political and social drama. I hope it inspired you to think about some of your favorite spices, rubs, or seasonings.

Also, shout out to that Worcestershire Pub Burger Seasoning by McCormick. What happened to that seasoning? It was our favorite for burgers and then Poof! It was taken from us!

I also have to say that Saco Pay-N-Save has fantastic seasonings and meat products.
