Wishing a good trip to Joyce (Austin) Donaven, kids, and Kay Donaven who are traveling to the New Orleans basketball finals.

Saturday, Jeanie took me to Sleeping Buffalo to sit in the hot pool. Both pools were packed!

Sunday, my granddaughter, Challise and Tim Hoff were here from Bozeman! We (Sally and I) met them and Gale (my daughter) in Malta. We had a delicious brunch cooked by Curt and Janice R. Challise goes to college and works in Bozeman. Tim is a welder, and he says there is plenty of work. The bad thing is that rent is so expensive in Bozeman.

Back in Whitewater, and most of Phillips County, the wind is blowing up to 70 miles an hour. We had a skiff of snow, but that melted quick!

Note: There is a brunch at 10 a.m. at Whitewater Lutheran Church on Easter Sunday, April 17, 2022. Church is at 11:15 a.m.

Dye some Easter eggs! Happy Easter! Have a good dinner with a dessert.

Clarice's Lemon Meringue Pie

Here’s a recipe from the P. C. Cookbook. It is Clarice Stahl’s (Whitewater) recipe.

Lemon Meringue Pie

2 Baked Crusts

1 ½ cups Sugar

1/3 cup plus 1 TBSP Cornstarch

1 ½ Cups Water

3 Egg Yolks, beaten

3 TBSP Butter

2 Tsp Lemon Peel, grated (optional)

½ cup Lemon Juice

2 Drops Yellow Food Coloring (optional)

Mix sugar and cornstarch; add water. Cook, stirring constantly, until very thick. Stir in egg yolks; add butter. Pour into pie crusts, heaping meringue into pie. Cool and enjoy! Delicious for Easter!
