Homemade Biscuits And Sausage Gravy

Oh yeah, who doesn’t love flaky scrumptious homemade biscuits? Probably everyone loves’em. This takes place at the Malta Senior Center on Saturday, January 27, 2024, from 11 a.m. - 1 p.m., and of course, it’s a free-will offering going towards LED lighting in the center.

The Senior Center will be serving up platefuls of luscious biscuits smothered in sausage gravy bound to tempt anyone’s appetite. As always, a slice of orange to add sweetness and endless cups of coffee. All this, followed by out-of-this-world desserts.

Chocolate sheet cakes, cottage cheese pie (resembles custard), sugar pie, and chess pie. All three were standbys in “hard times”.

Cottage cheese was a homemade staple years ago and homemakers looked to making more of the fare, hence a ‘pie’ evolved. Its origin is in Germany, Hungary, and other Far East countries. The topping makes the pie as a generous sprinkle of nutmeg finishes it off.

Sugar Pie mainly originated in France— ‘Tarte Au Sucre’. It is mixed with the fingers to prevent incorporating any air into the cream before it’s baked. Also called Finger Pie. It quickly became popular in the French-speaking Canadian Provinces.

Chess Pie is brought from England and found in New England and Virginia, hence, the reason it’s thought of as a Southern dessert. One story is that it was whipped up with anything in the ‘chest’ or pantry. It was called ‘Chest Pie’ but because of the Southern accent, it was changed to Chess Pie. Another story is that a woman who whipped up the recipe called it “Just Pie’ which turned into Chess Pie.
